RECIPE: VITAMIN NECTAR THUMBPRINTS
1 cup and 3 tbsp. sugar
⅔ cup all-purpose flour
¼ tsp. baking powder
½ tsp. salt
2 sticks unsalted butter, room temperature
1 large egg, beaten
2 tsp. vanilla
½ cup marmalade
Preheat the oven to 350 degrees. Line a cookie sheet with a parchment paper.
Put 3 tablespoons of sugar in a small bowl and set aside.
Mix together flour, baking powder, and salt in a large bowl.
Put the butter and 1 cup sugar in a medium bowl and beat with an electric mixer on low until smooth. Add the egg and vanilla and beat until fully incorporated.
Add the flour mixture on medium-low speed until blended.
Using your hands, press and roll the dough into 1 inch balls. Roll the balls in the extra sugar and arrange on the cookie sheet about 1½ inches apart.
Using your finger, press deep into the middle of each mound to make a well.
Bake until the tops look dry (about 12-14 minutes). Let the cookies sit for 5 minutes and then transfer them to a wire rack to cool. Just before serving, use a spoon to drop about ¼ teaspoon of the marmalade into the indentation.
