RECIPE: PISTACHIO PUFFS

Makes 4 dozen

INGREDIENTS

1 cup unsalted butter, room temperature

½ cup white sugar

2 tsp. matcha powder

2 cups all-purpose flour

1 cup finely chopped pistachios

½ cup powdered sugar


INSTRUCTIONS

1.

Preheat oven to 325˚ F.

In a medium bowl, beat the butter and sugar. Stir in matcha. Add the flour and pistachios and mix until blended.

Form mixture into a ball. Cover and chill for 2 hours.

4.

Shape the dough into ¾ inch balls. Place on a cookie sheet and bake for 15 to 20 minutes until crisp and golden.

5.

Remove from cookie sheet to cool on a wire rack. When cookies are cool, roll in powdered sugar. Store at room temperature in an airtight container.
